Homemade Zucchini Banana Bread with Chopped Walnut

After a failed attempt at steamed buns, again, we desperately need something to redeem our self-esteems.
We decided to try something that would guaranty an easy win. We picked my all time favorite bread, banana bread.
Banana bread and I go way back.
It along with Dr. Pepper (or French Vanilla depending on the weather) witnessed many of my late nights during my colleges days.
Banana bread did more than filling my stomach. Its texture, always so soft and moist, comforted me and helped me survived those late night lectures and lab classes.

These banana breads were wrapped individually by slice and sold at the small cafeteria downstairs. It would be fair to say that it had been out of the oven for so long that all of the breadcrumbs were picked up by birds by then. It wouldn’t be able to trace its way back to the mother oven. I was usually late to my evening class so I almost always ate it as it was, cold. On the rare occasions when I did have enough time to wait for the microwave and warm it, many more flavors burst out and I could hardly recognize if I were eating the same bread I got every week.
so I always wondered…what would it taste like when it was, oh my god, fresh out of the oven!

We tried it last night. Wow!! Was that a success or what?

We added all of my favorite ingredients in it, including Zucchini, chopped walnut, and ground cinnamon.
The zucchini were chopped so fine that it disappeared in the batter.
However, as we found out later, the flavors survived.. :)

I believed we both thought the batter looked like….hmm…vomit. We didn’t have the heart to call it out though.

Wow!!! It looked just like breads we saw in stores! Gourmet stores!
